Every time I water gaillardia the leaves sticks with soil and it dies and eventually whole plant dies. Is there any trick to water it carefully?

Appears your watering technique is flawed. Water should always indirectly reach the plant if through spilling or else sprinkling should be light like a shower not to press down the seedling. Anyhow Gaillardia is a drought resistant plant you can skip watering occasionally and it won't mind.
