How to get pictures representing true colours of a flower?

True colors... Sir, i think this has to be defined... i have experienced the same as you did.. in my limited knowledge better colors can obtained in indirect bright light, cloudy day picture are always good... picture taken near 9:00 am to 10:00 are also near true colors... pictures taken in the evening mostly give bright colors a glowing look...

If I were to use white umbrella to block direct sun light, would it give better results?

Pictures taken in the morning often give better indication with auto option. At times i encounter the same problem as capturing the blue & purple shade is often problematic and have observed that by turning the flash off option for outdoors shots especially between noon and 5 pm give better results.
