Aniq, your question answer is hundreds of pages long, and you are asking about these things which beginners learn after months of reading & experience. First of all search your nearby market for seeds or seedling to start. For beginners seedlings are easy to start but if you want experimenting you can try seeds also, nothing to lose except you will gain some experience in any case.

For seeds, mix old manure or leaf compost & soil in 1:4 and for seedling transplant or mature plants in 2:5. These are some vegetable & Herbs which can be sown these days (fall planting).

Asparagus, Bean(پھلی), Beetroot (چقندر), Bitter Gourd(کریلہ), Broccoli(سبزگوبھی), Cabbage(بند گوبھی), Carrot(گاجر), Cauliflower(پھول گوبھی), Onion(پیاز), Peas(مٹر), Radish(مولی), Spinach(پالک), Sages(ساگ), Tomato(ٹماٹر), Potato(آلو), Turnip(شلجم), Sweet pepper(شملہ مرچ)

Basil, Celery, Chives, Coriander(دھنیا), Dill Elephant(سویا), Garlic Chive(لہسن), Lettuce(سلاد), Lemon Grass, Origano, Rosemary, Mint(پودینہ), Thymus.

Yes, there will be some which cannot suit your climate but in this regard your local nurseries or former or some gardening lover can guide you.
Now start something, spend some time with them and then ask about your particular problem. Best of Luck
