I think that is why seed packs say sow 3 per hole, and thin to one seedling- genetic?

No it is not the case
Such genetic behaviors are only apparent at later stage.
To sow multiple seeds at a location/pot is to get uniform germination, because chances are that every seed might not germinate. To preclude the chance of gaps, you sow thickly and later thin out to get the desired spacing.

Genetics is important but circumstances even more. Sometime back dwelling on same i wrote this :D In my humble opinion this holds good for plants as well(in same species), factors such as light, media, nutrient do make a difference.
When a child is borne
"When a child is borne, he is like a white canvas on whom the painter, i.e the circumstances and enviroment can paint anything they like. He is raw, pure and innocent. He is mutilated, moulded and imparted with habits and nature.

Man is what the surroundings makes him and nothing more. A child when born has simply no virtues, no vices, no nothing, just simple humanly features even which are changed through time and event. First we develop his thinking patterns, his logics, his habits, which are always groverned by the circumstances and enviroments. Incidents are the tools by which we are mended, moulded and broken to take a new shape....

Every child has same faith same idionocrysies that are changed by time and space. So what i am is what i have been through and what i have seen, felt or tasted, no fault or virtue of mine. its the virtue and vice of prevailing conditions and happenings.
We had almost same potentials, same talents, same genious but it differed, we differed from each other cauz our surroundings and circumstances differed.

I could have been Alexander the great or Einstein if i was at his place and they me if on my place. God chooses all these and design the plan for our grooming and then the nature grooms us so that we play our part in the drama of life."

Even further.......long term effects of environmental conditions can even modify genetics. Why Giraffe has long neck, why Africans are more black, Theory of evolution if someone believes it :P

Seed packs say 'choose the strongest'- that was my point.

Say, you have three seedlings growing in one pot which is good enough for only one, which two will you destroy/re-locate. Weakest or strongest?

its mean that the genes are only defining that they are amaryllis and remaining is because of variable envirmental factors effecting the growth of bulbs?

Lets give weakest to chance to survive by relocating before destroying. May they flourish in new location, else destruction is the ultmate destiny.

I am a philosopher rather than a scientist...I love to see abstract rather than fact. hahaha.
Genes do play role. Their presence and absence and then further amalgamation of them.
